Daaaaang, Jessi. Two recipes in one week!? Well again, if you’re following me on Instagram then you’ve already seen these. I’ve really enjoyed making content there but I’d like to see myself get the content here as well. I’ll continue sharing lots of recipes and posts that will hopefully serve you well. Smoothies have been a craving of mine this summer. Especially ones that are smooth (can’t stand chunks in my smoothies), bright in color, and filling! If it’s not filling enough I like to pair it with something to eat on the side. You can do that too, you know. 😉 This one, however, is packed with 15 grams of protein and five grams of fiber. If I wanted to make it even more filling I would have added some nut/seed butter or avocado for some added fat.

High Protein Smoothie

How did it get so high in protein you ask? The main ingredient is unflavored, kefir! Kefir is a fermented milk that tastes like a drinkable yogurt. There’s 11 grams of protein in one cup! It’s also high in calcium and vitamin D. Both of which are essential and are two nutrients that I believe are important to be mindful of. I highly recommend with your annual exam you get your Vitamin D level checked. Please don’t take the large over-the-counter supplements of them as they’re not meant for you to be on them long term. Get your levels checked by your doctor first before you go taking mega-doses.

A smoothie that gives you a healthy dose of protein, calcium and vitamin D? What could be more? That fiber, baby! Fiber helps you stay full and helps your digestive system operate smoothly if you know what I mean. You also get some antioxidants from those blueberries too. What’s not to love about this smoothie?!

Blueberry Zucchini Smoothie

Ingredients

  • 1 cup plain kefir
  • 1/2-1 cup zucchini, shredded
  • 1/4 cup oats
  • 2 tbsp ground flax meal
  • 1/2 cup frozen blueberries
  • Bonus: add lemon juice or zest for a zip

Instructions

  • Add all ingredients to your blender, mix and enjoy.

Pretty darn easy if I do say so myself! It would change up your nutrition profile but you can of course sub the kefir for any milk/milk alternative. The zucchini was freshly grated from my two garden plants that are doing okay still! If you get a lot of zucchini during the summer, I highly recommend shredding or chopping it up (leave the skin on) and freezing it in one cup portions for smoothies like this year round. Or, you know, for zucchini bread.
