Ingredients

  • 1 cup blueberries
  • 1 cup strawberries
  • ½ medium English cucumber*
  • 1 jalapeno
  • 3 green onions
  • ¼ tsp salt optional

Instructions

  • Chop all of the berries into small pieces.
  • If using a regular cucumber, halve the cucumber and scoop out the watery middle/seeds of the cucumber. Slice and dice into bite size pieces. No need to scoop out the middle of an English cucumber.
  • Dice the jalapeno. If you want extra heat, chop the whole pepper including the membranes and the seeds.
  • Thinly slice the green onions using the white and green parts.
  • Mix all ingredients together and add the salt if desired. We like a chunky salsa but if you want it more pureed then you can pulse it a bit in a food processor.
