A simple and delicious recipe perfect for a snack in between meals or packed alongside other nutritious food for lunch.

Equipment

Ingredients

  • 10 Medjool dates I buy the ones with pits because they're cheaper and its easy to take the pits out
  • 1 cup oats quick, rolled, steel cut or old fashioned
  • cup unsalted, cashews
  • ¼ cup almond butter Any nut butter will do
  • 1 tbsp maple syrup
  • tbsp hemp hearts Can omit or add in chia or flax seeds instead
  • 1 tsp vanilla extract

Instructions

  • If using dates with pits, simply make a slit in them by slicing them down the middle lengthwise. They open easily and you can take the pit out.
    If they feel particularly hard, soak all of the dates in warm water for about 10 minutes. This will help them blend more easily.
  • Add all ingredients into your food processor in no particular order and pulse until everything is well mixed
  • Use a tbsp to scoop and roll them into bite sized energy bites/balls and store in your fridge for 5-7 days or freezer for up to 3 months!
