10Medjool dates I buy the ones with pits because they're cheaper and its easy to take the pits out
1cupoatsquick, rolled, steel cut or old fashioned
⅓cupunsalted, cashews
¼cupalmond butterAny nut butter will do
1tbspmaple syrup
1½tbsphemp heartsCan omit or add in chia or flax seeds instead
1tspvanilla extract
Instructions
If using dates with pits, simply make a slit in them by slicing them down the middle lengthwise. They open easily and you can take the pit out.If they feel particularly hard, soak all of the dates in warm water for about 10 minutes. This will help them blend more easily.
Add all ingredients into your food processor in no particular order and pulse until everything is well mixed
Use a tbsp to scoop and roll them into bite sized energy bites/balls and store in your fridge for 5-7 days or freezer for up to 3 months!
