Ingredients
1lbground chicken
½bell pepper
⅓cupcrushed pineapple
1jalapenodiced
14.5ozcrushed tomatoes
2tbspworcestershire sauce
1tbspmustardof your choice
1tbspbrown sugar
1tbspoil
3clovesgarlic
¼cupflax meal
Buns for serving
salt and pepper to taste
water as needed*
Instructions
Dice the bell pepper as small as you can. Dice the jalapeno if using and mince the garlic. Add all of these to a pan over medium heat with a drizzle of oil. Saute them for 3-5 minutes.
Add and brown the ground chicken. Ground chicken cooks differently than ground beef. I recommend you spread it out on the pan, break it apart and let it brown on one side before flipping and breaking it apart some more.
Add all remaining ingredients except for the flax meal. Saute until the mixture is simmering and allow it to simmer gently for about five minutes. It will appear a bit soupy!
Add and stir in the flax meal and allow the sauce to thicken for a few more minutes.**

Notes
*If your mixture is thick, add 1-2 tbsp of water or broth at a time. Stir in fully before deciding to add more.**If your mixture is too soupy, add an additional 1-2 tbsp of flax meal at a time. Stir it in fully and allow to simmer (with no lid) an additional 3-5 minutes before adding more.
