Ham and Cheese Frittata

A baked egg dish that requires minimal effort for delicious and fluffy results. Make this dish for your next brunch, brinner or meal prep it for a busy work week.

Equipment

  • 1 8x8 inch pan

Ingredients

  • 1 yellow onion
  • ½ red bell pepper*
  • 2 cups spinach, uncooked
  • 1 lb diced ham
  • 1 cup shredded cheddar cheese, divided
  • 12 eggs
  • ¼ cup 2% milk
  • 1 tsp paprika
  • ¼ tsp ground black pepper
  • 1 tsp olive oil

Instructions

  • Preheat the oven to 350 °F
  • Dice the onion and bell pepper. Saute over medium heat with the oil for 3-5 minutes or until onion is translucent.
  • Chop the spinach.
  • Whisk the eggs and shred the cheese if not using pre-shredded. Mix the cheese in with the eggs reserving about ¼ cup on the side.
  • Add the spices to the egg and cheese mixture, combine.
  • Add the cooked vegetables, diced ham, egg and cheese mixture to a greased 8x8 inch pan. Top with spinach and use a spoon or rubber spatula to combine.
  • Sprinkle on the remaining cheese and bake for 35-40 minutes.**

Notes

*Use the other half of the bell pepper in this dish if desired or save for another dish. Alternatively, slice it and enjoy it with hummus as a snack.
**Give the pan a wiggle after baking for 35 minutes. If the center is still very runny and jiggly, allow to bake the additional five minutes and check again.
