Chukar Recipe: Simple, Sweet and Spicy

Ingredients

  • 1 chucker *Substitute 1-2 pounds of chicken breasts or thighs
  • 2 large apples *I recommend honey crisp
  • 1 large white onion
  • 6 radishes If you grab a bundle of 6-8 it is fine to use more.
  • 4 large carrots rainbow carrots add more color but are not necessary
  • 2 tbsp olive oil
  • 3 tbsp Waltons' sweet and sassy seasoning*
  • 1 cup wheat berries**
  • 1 cup broth chicken, vegetable or garlic

Instructions

  • Optional: Brine the chukar before cooking in a mixture of salt, sugar and water for 4-6 hours in the fridge. Discard brine after done.
  • Cook wheat berries in water according to package. For more flavor add 1/2 a chicken bouillon cube or 1/2 tsp of bouillon paste
  • Prepare all vegetables and fruit by chopping the apples and onions, quartering the radishes, and slicing the carrots.
  • Add oil to skillet and turn heat to medium.
  • Add all vegetables and apples to pan and saute for 4-5 minutes.
  • Sprinkle two tablespoons of seasonings* across the mixture as it cooks.
  • While vegetables and apple saute, coat the meat with a little avocado oil and seasonings. If using chicken breasts, filet in half to make them approximately 1/2-1 inch thick.
  • Add the meat to the skillet and brown both sides for 2-3 minutes. Add broth and bring to a simmer. Cover pan with lid and turn the heat low. Cook another 5-8 minutes depending on the width of the meat.
  • Meat will continue to cook when you turn the heat off after approximately 5-8 minutes so wait to take the temperature until the pan has cooled a bit. Especially if these are thinner pieces of meat, they will not take long to cook and you don't want to overcook them.
  • Spread meat and vegetable mixture over the wheat berries or add wheat berries directly to the pan and enjoy hot or cold!

Notes

*If you don't have this seasoning, use a mixture of brown sugar, salt, garlic and onion powder, mustard seed, and celery seed. Start with 1/2 to 1/4 tsp of each and smell the combination to see what you think.
