If you want a creamy, nutty and tropical spread then you need to make this Peanut Butter Coconut Spread. If you’ve never made your own peanut butter, this recipe will show you how easy it is to make. 

I suggest making this to use for an epic peanut butter and jelly sandwich or sandwich it between two vanilla wafer cookies. The coconut makes this extra creamy and it works well as part of a meal, snack or dessert.

What You Need for Peanut Butter Coconut Spread

Three ingredients are all you need to make this absolutely delicious spread. Gather up unsalted peanuts, full fat coconut milk or cream (in a can), and light brown sugar. These three will blend together and the brown sugar adds just enough sweetness to it.

  • Unsalted peanuts: I chose unsalted peanuts because they give the most natural peanutty flavor. Salted peanuts end up overpowering the spread due to the saltiness. 
  • Coconut milk: Using coconut milk or cream from a can is the best way to make this dish creamy and smooth. Canned coconut milk is also easier to access and utilize in other recipes as opposed to coconut flakes or flakes from a fresh coconut. 
  • Light brown sugar: Some may choose to omit this but I think it adds the perfect amount of a mild caramel flavor to this spread. The more you learn to cook, the more you’ll find how sugar can really balance a dish, dressing, or sauce.

Learn How to Make It

A food processor works best for making this coconut spread soft, silky and spreadable. Add the coconut and peanuts in together. Process them for a full minute, scrape down the sides with a rubber spatula, and continue to blend until creamy.

It does take a full five to ten minutes to form that perfect texture. Be patient, it’s worth the wait!

Once the texture is right, process in the brown sugar for ten to fifteen seconds.

Just like peanut or almond butter, this coconut peanut butter spread has a ton of potential. Use it with any of the following options.

  • Toast
  • Pancakes
  • Baked goods (mixed in or spread finished baked goods)
  • Crackers
  • Waffles 
  • Sliced apples, pears, or strawberries
  • Jelly on a sandwich
  • Banana
  • Smoothie
  • Yogurt
  • Dessert pizza
  • Vanilla wafer cookies
  • Smores
  • Chickpeas into a hummus
  • Mixed in for peanut butter cookies
  • Spread on a burger
  • Dates

What to do With the Leftover Coconut Milk/Cream

This is an important part of cooking, figuring out what to do with natural leftover ingredients when a recipe only calls for half of something. The leftover can of coconut milk or cream is not something we want to waste. 

Use the other half of the coconut milk for:

  • Overnight oats in place of milk
  • Tikka masala 
  • Cooking rice or quinoa: You will likely need more liquid than what you have left in the can of coconut milk so use water for the remaining amount of liquid you need.
  • Baked goods

Optional Add Ins

While I love this simple recipe on its own, as you learn to cook start experimenting with add-ins.

  • Cocoa powder
  • Chopped peanuts stirred in with a spoon for a chunky butter finish
  • Cinnamon
  • Vanilla extract
  • Toasted coconut flakes
  • Seeds such as hemp, flax, or sesame

Is Peanut Butter Spread Healthy

If you are a new here, then you may not know that I don’t like to label foods as “healthy.” If I add the word healthy onto any recipe I’ve made here that means any other recipe that doesn’t have that label “unhealthy.” This is very similar to calling a food good or bad. 

Yes, there are foods that are more nutrient dense than others, but ultimately one individual food does not need to be labeled as healthy or not. It is the food you eat throughout a span of time that matters, not single moment foods. 

To flip the script, I’ll say that anybody can be a healthy individual and enjoy this peanut butter spread with coconut. 

Storage 

Store this coconut spread in an airtight container in the fridge. It’ll last for about two weeks but it’s so delicious you’ll be done with it and making it again in no time. Because it has coconut milk or cream in it, you can’t store it at room temperature.

Ingredients

  • 2 cups unsalted peanuts
  • ½ cup full fat coconut milk (in a can)
  • 1 tbsp brown sugar

Instructions

  • Add the peanuts and coconut milk to a food processor and blend until desired smoothness. While processing, use a rubber spatula every minute to scrape down the sides.
  • Once blended to desired consistency (takes about 5-8 minutes) process in the brown sugar for 10-20 seconds.

Notes

Optional Add Ins: try adding a pinch of cinnamon, cocoa, vanilla extract, or honey instead of brown sugar.
