Ingredients:

  • Celery
  • Carrots
  • Onion
  • Bell pepper
  • Optional: as much fresh garlic as you want
  • Broth (try using Better Than Bouillon garlic paste for extra flavor or make your own)
  • Tomato paste
  • Half and half or heavy cream- I used Nutpods half and half as a non-dairy cream option, it was given to me to try it out. I liked it but will likely use regular half and half next time. However, if you have a dairy allergy or intolerance, this makes a great substitute.)
  • Cooking oil such as avocado or olive oil

Instructions:

  1. Loosely chop all the vegetables. This is a great recipe for practicing your own knife skills or allowing kids to chop with you because the pieces don’t have to be uniform. 
  2. Sauté them in oil until they are tender and fragrant. This takes about 5-8 minutes.
  3. Add the broth and the tomato paste. Stir well and then bring the mixture to a boil.
  4. Reduce the heat to a simmer, cover, and let it simmer for 20-25 minutes. Alternatively, try slow cooking it on low for a few hours for an even richer flavor.
  5. Carefully purée the sauce using an immersion blender or a traditional blender, being cautious of hot splatters.
  6. Stir in the cream until well combined.
  7. Serve over your favorite noodles and top with a sprinkle of Parmesan cheese and fresh basil for the perfect finishing touch.

Why You Don’t Have to Sneak Veggies In:

How you talk about vegetables depends on the age of your kids, but as a dietitian I do NOT recommend using the terms, “good for you/bad for you.” This creates an all or nothing approach to food and can cause a negative relationship with food.

So, while hidden veg pasta sauce can be a fun and creative option, don’t forget that honesty and openness at the dinner table can be just as impactful in encouraging healthy eating habits.

Hidden Veg Pasta Sauce

Ingredients

  • 2 celery stalks
  • 3 large carrots
  • 1 large white onion or vidalia
  • 1 bell pepper color of choice
  • ½ cup half-and-half*
  • 3 cups broth**
  • 1 tbsp tomato paste
  • 1 tbsp olive oil

Optional

  • As much garlic as you want!

Instructions

  • Prepare all of the vegetables by dicing them roughly. If they an be fairly uniform that helps them cook evenly but no need for perfection since it will all get pureed.
  • Heat a pot to medium heat and add oil.
  • Add the vegetables (and garlic if desired) and saute for about 5 minutes
  • Add the broth and tomato paste, stir to combine.
  • Bring to a boil then reduce to a simmer. Cover the pot with the lid and simmer for 20-25 minutes.
  • Puree using an immersion blender or regular blender. Use caution as the contents will be VERY hot. Make sure you know how to safely blend hot liquids.
  • Stir in cooked noodles, fresh parmesan cheese and top with basil if desired!

Notes

*Can use a dairy free half-and-half if needed or substitute milk or lactose free milk. I did not test this recipe using Oatmilk or soy milk.
**You can make your own broth from veggie scraps or use any flavor you prefer. For added protein, use a bone broth.
